Traveling the World for Cold Coffee Excellence
Cumulus’s sourcing philosophy is rooted in exploration. Our team has traveled the world to find the best coffee for brewing and drinking cold, tasting hundreds of coffees to select beans that shine in cold brew and cold espresso.
Some origins are chosen for their bright, fruit-forward sweetness, while others are selected for their rich, chocolatey depth or delicate floral notes. High-altitude farms in regions such as Central America and East Africa offer beans with vibrant acidity and layered complexity. These qualities become even more pronounced when brewed at a cold temperature, producing the perfect cup of coffee.
The Gilded Series: Rare Coffees for Cold Brewing
Our sourcing philosophy comes to life in the Gilded Series, a limited-release line designed to showcase extraordinary coffees from around the world. Each release showcases unique origins, rare processing methods, and exceptional coffee beans carefully selected to shine when brewed cold.
Gilded 001: Wush Wush introduced this vision with beans grown in Ethiopia’s fertile Oromia mountains. Through a 96-hour dry fermentation process, this rare variety revealed tasting notes of freshly picked berries with a subtle liquor-like lift that lingered on the tongue. It quickly became one of our most coveted coffees.
Building on that debut, Gilded 002: Huila brought a new expression of excellence from Colombia. Known for producing some of the most complex and balanced coffees in the world, the Huila region offered a cup rich in chocolatey sweetness with layers of stone fruit and caramel. Its approachable yet refined flavor profile showed how terroir and tradition combine to elevate cold brew coffee.

Roasting for Cold
Once beans are sourced, they are roasted in a manner designed to bring out their best possible expression in a cold format. Unlike traditional roasting, which often emphasizes darker profiles for hot brewing, Cumulus’s slow, low-temperature roast focuses on preserving delicate aromatics and balancing acidity with sweetness. This approach allows subtle notes, such as citrus, cocoa, or ripe fruit, to shine when brewed cold, rather than being overpowered by roast bitterness.
From Roast to Capsule: Locking In Freshness
After roasting, the coffee is ground and brewed to a concentrated cold coffee base designed for the Cumulus Coffee Machine. That brew is then cold-packed into recyclable aluminum capsules. Cold-packing minimizes exposure to heat and oxygen, helping maintain the nuanced flavors that shine in cold coffee, while sealing locks in freshness and protects delicate aromatics until the moment you brew.
